This Loaded Baked Potato Soup is a cinch to put together! It’s comforting and satisfying – and perfect for these colder nights!
1 lb. bacon, chopped, divided
1 large onion, chopped
2 stalks celery, chopped
1/4 cup flour
3 cloves garlic, minced
1/4 cup all-purpose flour
3 cups vegetable or chicken stock
6-8 large potatoes, scrubbed and cubed
Salt and pepper, to taste
3 cups heavy whipping cream
3 cups Sharp Cheddar cheese, shredded, divided
Sour Cream, Green Onions, optional, for topping
I made this last night for my family. To make this faster, I used canned diced potatoes and instead of frying bacon, I bought bacon pieces from the store Since I usually have bacon grease on hand, I used that to cook the veggies. Everyone loved it and it took about half the time!
